White Pepper Whole
White pepper comes from the same plant as Black pepper. To make white pepper the berries are allowed to ripen on the vine. The ripening enhances the flavor and the berries changes to yellow and red in color (a magnet for Birds). while over-ripening some of the berries drop before harvesting.
The berries are handpicked and soaked in water for a day or two allowing it to ferment and make the skin soft and easy to remove. The skin is easily removed and the remaining product is dried to make white pepper. White pepper is used in any dish that requires a little “pepper bite” without the black color. The shelf life is about2 to 3 years.
