We sell it unpasteurized since honey has qualities for self-preservation.The nutritional value also is diminished by heating. Customers have the option to pasteurise  by heating the honey to 145 degree F.for 30 minutes. Unpasteurized honey may not be suitable for infants and immunocompromized persons.
